Tasty Tuesday

Filipino chicken barbecue or inihaw na manok

Filipino Chicken Barbecue (Inihaw na Manok)Serves 4

If you have concerns about boiling the used marinade, double the measurements for the marinade and set half aside for the basting mixture.
Ingredients:
1 1/2 cups cane vinegar, or 1 cup apple cider vinegar
1/2 cup sugar
3 bay leaves, torn or crushed
1/4 cup soy sauce
3 garlic cloves, finely grated
1 tablespoon finely ground black pepper
12 oz. 7-Up or Sprite
5 pounds chicken leg quarters or your preferred chicken pieces, preferably dark meat, cleaned and trimmed of excess fat


In a large container that can hold the chicken pieces, combine all ingredients except chicken. Mix until sugar is dissolved. Marinate chicken in the refrigerator for at least 3 hours or up to 8 hours.


Take the chicken out and transfer the pieces to a large plate. While waiting for the chicken to come to room temperature, pour the marinade into a small sauce pan (or discard the marinade and pour the additional reserved marinade into a sauce pan) and boil over medium to high heat until the marinade is reduced to a sticky syrup.

Heat your grill to 350 degrees or medium heat. Grill chicken pieces, bone side down, for about 8 minutes, then reduce the grill temperature to 275 degrees. Continue grilling bone side down for about 20 minutes, basting once. Flip the pieces over and grill for another 20 minutes, basting occasionally. Continue grilling, flipping, and basting until chicken is fully cooked. Check for doneness by piercing the joint to ensure juices run clear, or until chicken reaches 163F internal temperature.

Take chicken off the grill, tent with foil, and let rest for about 5 minutes before serving.

First visit to Freebirds

Here is part one to a start of our weekend. Although there will be more pictures to come but its always great to spend it with family and friends. We tried out Freebirds for the first time after opening for a month and a two block radius waiting line and believe me I would have waited. I want to start documenting different places I eat at, since I'm one to try out new things so why not do so.

Freebirds: Midland, Texas
Type: It's like Subway but for burritos
Instructions: Choose your tortilla and size, type of rice, cheese, meat, beans, veggies and other condiments
Price: Reasonable

My choice was a spinach tortilla with cilantro lime rice, monterey cheese, white chicken, black beans, roasted corn, red onions and cilantro. I was so impressed with my choices that I'm sure I will get more than once. I'm hungry just typing this and describing exactly what I added to my burrito. The place was so lively and rock n roll. There was a motorcycle with the statue of liberty riding on it extremely cool. The line was semi-long which we waited for about 30 minutes but it was worth it. If you ever happen to see this in any town you stop by or when your ever in my town be sure to try them out.

Yay, tomorrow is Friday!!! I am super excited my weekend is filled with so many fun events. I found this salmon top at a thrift store for only $3, can you believe that bargain. What plans do you guys have this weekend?

Sorry for the lack of outfit post I intended on doing so yesterday but we had a major grass fire near our house that almost wiped out an entire 4 block radius. Thus by far the most scariest thing that has ever happened to us. We are all safe now and unbelievably thankful that our brave fire fighters did what they did. I hope you all have had a greater week then I did.

I love it when crafty people come up with the cutest things. Like this for instance who would of thought to use paint chips or swatches to punch out hearts and make cute heart bunting out of them. This would be incredible for parties.

Here's what we made last night and boy was it delicious. I've made it before and having it the second time around made if even taste better. I love eating breakfast for dinner. Go ahead and try it for yourself, believe me it taste better then it looks.

Huevos Rancheros
Ingredients
2 small tomatoes
1 small onion
1 medium jalapeno pepper, chopped
2 cloves garlic; 1 chopped, 1 smashed
1/2 teaspoon hot sauce
1 teaspoon ground cumin
Kosher salt and freshly ground pepper
2 tablespoons plus 2 teaspoons extra-virgin olive oil
1 15.5-ounce can black beans, drained and rinsed
4 large eggs
4 6-inch corn tortillas, warmed
1/2 cup crumbled feta cheese
1/4 cup chopped fresh cilantro
Directions
Prepare the salsa: Set a grater in a large bowl; grate the tomatoes and onion into the bowl. Add the jalapeno, chopped garlic, hot sauce, cumin and salt and pepper to taste. Heat a medium skillet over low heat and add 2 teaspoons olive oil. Fry the salsa in the oil until it thickens slightly, 3 minutes. Remove to a bowl and set aside.

Add the beans to the same pan along with the smashed garlic, 1/2 cup warm water and a pinch of salt; cook over low heat until warmed through, smashing slightly with a fork.

Meanwhile, heat the remaining 2 tablespoons oil in another skillet. Fry the eggs sunny-side up; season with pepper.

Place 1 warm tortilla on each plate. Divide the beans among them, then top with a fried egg, some salsa and cheese. Sprinkle with cilantro and serve with the remaining salsa.

"a picture an hour"

Remember when I said that my weekend would be busy, well it was. I had a great time Saturday with my friend shopping, finding outfits for our family trip next month and dinner with her and her boyfriend. Sunday of course was the best of it all here's a recap of pictures taken in an hour. Enjoy!!

Hi, lovelies!!! Extremely doing a post at the speed of light as we speak. I'm late at doing this since my weekend came a little to fast as soon as I got off work. Justin and I are going on a couples date with one of his friends and we're going to go watch Priest. I hope it's has good as the trailer puts out. I better get going the movie starts in 30 minutes and I want to get popcorn before it starts. Have a great weekend everyone!!!
